Recipe: Cashew Cheese on Cucumbers

With the heat wave in the past couple weeks,  I wouldn’t be surprised to hear that you might want to keep things simple when making food. I have been mostly doing quick sautés or dishes that require no cooking at all.

This recipe for Cashew Cheese on Cucumber does require a little forethought to soak the cashews in water for a few hours. Otherwise you only need a processor and a knife plus the ingredients to put together appetizers for a potluck or picnic, or just a healthy snack at home.

I like this combination for the refreshing cool crunch of the cucumber,  creamy but cheesy flavors with hint of garlic of the cashew cheese, and touch of salty herb from the pesto. I eyeballed a lot of these so make sure you taste to see what amounts fit your taste levels. The more nutritional yeast you use, the cheesier the flavor while being dairy free. Nutritional yeast is also a great topper to sprinkle on popcorn to have cheese popcorn with your movie!

Ingredients:

For the Cashew Cheese

  • 1 1/2 cups raw cashews soaked in water for 2 hours
  • 1/4 cup – 1/2 cup water; the more water used, the thinner and creamier the cashew cheese will be, so you want to add to your liking for consistentcy a bit at a time
  • 3 or so tablespoons of freshly squeezed lemon juice, more to taste if you’d like
  • 1-2 tablespoons of nutritional yeast, or more to taste if you’d like
  • 1 clove of minced garlic, or more to taste if you’d like
  • Dash of onion powder
  • 1 teaspoon sea salt or more to taste
  • 1 teaspoon of freshly ground pepper or more to taste

For the Pesto – this is more of a rough guideline as I often just eye it after grabbing handfuls from my plant

  • 2 cups fresh basil
  • 1/4 cup or so of olive oil
  • 1/8 cup or so of pine nuts (for more flavor, toast the pine nuts in a dry skillet for a few moments until aromatic, but be careful it doesn’t burn)
  • 1/2 tablespoon of minced fresh garlic
  • pinch or so of salt
  • a few grounds of freshly ground pepper

Directions:

For the Cashew Cheese

  1. First, you will need to soak the raw, unsalted cashews in water for about 2 hours. The water level should cover the tops of your cashews.

  2. Then, drain the water. Place the cashews, nutritional yeast, 1/4 cup water, lemon juice, the minced garlic and onion powder and salt in the food processor and pulse until roughly blended.
    After 2 hours of soaking, drain the water from the cashews To make the cashew cheese, place the drained pre-soaked cashews, nutritional yeast, 1/4 cup water, lemon juice, the minced garlic and salt in the food processor and pulse until roughly blended
  3. Now as you continue to taste, add in the remainder of the water to get the consistency you would like. If you’d like, you can choose to add more lemon juice, or more nutritional yeast, or more minced garlic or salt to your preference depending on how garlicky, cheesy (from the nutritional yeast), lemony, etc you enjoy.
    To make the cashew cheese, place the drained pre-soaked cashews, nutritional yeast, 1/4 cup water, lemon juice, the minced garlic and salt in the food processor and pulse until roughly blended.   4. Add a few grounds of freshly ground pepper. You can serve as is immediately, but if you refrigerate it for a couple hours the flavors will develop more and texture get a bit thicker so  it will be even more tasty the next day – put it in a container to be used as a dip for a picnic with veggies, or spread on a sandwich, so many possibilities!

For the Pesto

Blend all the ingredients for pesto together – you may want to add a little bit more olive oil, salt, or pepper to taste. Puree until the mixture is smooth. Make sure you pause once in a while to scrape the sides of the bowl with a rubber spatula as needed to make sure it all gets mixed well, as well as to taste and adjust to your liking.

For the final Cucumber Cashew Cheese appetizers

Slice the cucumbers and slather on a bit of the cashew cheese. With a spoon, add on a bit of the pesto. Serve!

I put this combo on cucumbers buy it’s also great in sandwiches and the cashew cheese can be substituted in pasta like Ricotta in pasta shells or lasagna too.

Strawberry and Cheese Bruschetta Recipes

It’s strawberry season right now in Portland, and although the small looking Hood strawberries may look not as plump and juicy as their California cousins, let me assure you that they make up for their appearance in flavors. This makes them such the treasure that people get up early to rush to the Farmers Market before they sell out – and yes, they do sell out.

I like strawberries usually with a little bit of cream, but of course with cheese is also quite acceptable, like in these strawberry and cheese bruschetta recipes. I have two ways of making strawberry and cheese bruschetta, which celebrates the flavors of these strawberries by complimenting them just with a little rich creamy cheese and olive oil, a little counter with good balsamic vinegar and then uses the vehicle of toasted bread to get them into your mouth.

One uses mozzarella, as well as salt and fresh ground pepper, and the other uses goat cheese. I decided to share both with you. Perhaps for fun, since the ingredients are so close together, you might make both at once like I did for a little bruschetta face-off.

After all, it might take you tops 20 minutes to whip this together for your early summer get together.

They look gorgeously impressive as a starter for a dinner party, or just for yourself to go with your sangria or glass of wine as you sit outside on your porch or patio reading a book.

Strawberry Bruschetta with Mozzarella

This is a lot like caprese, but instead of heirloom tomatoes (oh, can’t wait for those treasures to start appearing on the plants and markets) it uses the current in season strawberries. This version of bruschetta highlights the strawberries more as they are contrasted against the very fresh subtle taste of the rest of the ingredients, and there’s something delightful about the parallel bursts when you bite both into a strawberry and a little mozzarella piece. The amount for the recipe serves 4.

Ingredients:

  • 1/2 French Baguette or you can also use a good bread loaf that has a nice crust that you might slice into quarters or halves depending on the loaf size
  • 1 1/2 cups fresh strawberries
  • 2 tablespoons of fresh basil, chopped
  • 4 ounces fresh mozzarella, diced
  • Extra virgin olive oil
  • Good balsamic vinegar
  • Coarse salt
  • Freshly ground black pepper

Directions:

  1. Slice your baguette or bread into palm-sized pieces, brush with oil and toast or grill until lightly toasted.
  2. Clean, dry, and then dice strawberries.
  3. Chop your basil leaves finely, add to the mixing bowl of strawberries and toss, then  let stand.
  4. Dice up your fresh mozzarella, and add to the mixing bowl. Toss together, and then spoon this mixture onto each of your bread slices.
  5. Drizzle all the slices lightly with a little bit of olive oil and a drizzle of balsamic vinegar. Finish with a sprinkling of salt and fresh ground black pepper.

Strawberry Bruschetta with Goat Cheese

The reason why I like this version of bruschetta is that the texture of the goat cheese is very luxurious, and depending on what goat cheese you purchase it often has an extra bit of tangyness that is added.

Ingredients:

  • 1/2 French Baguette or you can also use a good bread loaf that has a nice crust that you might slice into quarters or halves depending on the loaf size
  • Extra virgin olive oil to brush on baguette slices
  • 1 1/2 cups fresh strawberries, diced
  • 4-5 large basil leaves
  • 4 ounces goat cheese
  • balsamic vinegar for drizzling
  • Freshly ground black pepper

Directions:

  1. Slice your baguette or bread into palm-sized pieces, brush with oil and toast or grill until lightly toasted.
  2. Clean, dry, and then dice strawberries. Place them in a mixing bowl.
  3. Chop your basil leaves finely, add to the mixing bowl of strawberries, toss, and then let stand.
  4. On each of your bread slices, spread your goat cheese. Depending on the strength of flavor of your goat cheese, you might slather it on or just want a schmear.
  5. Finally, top each slice with the strawberry and basil. Drizzle all the slices lightly with (optional) a little bit of olive oil and a drizzle of balsamic vinegar. Finish with a freshly ground black pepper.

So easy but beautiful and delicious. You won’t break a sweat making these at all, but the results look incredible.

Smoked Beer Cheese Recipe: Roasted Garlic, Parmesan, Tillamook Smoked White Pepper Cheddar

Now that the weather is turning cool and the leaves are turning, I turn to cooking again and wanting something warm. Let’s make that warm and oozy and… for Octoberfest, with beer?

I’ve also been thinking about Halloween food. I have to admit, I am not much a fan of Halloween, although I am of autumn. I love the colors of the leaves and the crunch sound they make as you walk on them that makes me think of mac and cheese with panko topping, the cooler temperatures that encourage layering of clothing and scarves and layered casserole and a glass of red wine for dinner. I do love autumn and comfort food.

But, sadly, not Halloween. I’m not that big into candy, I’m allergic to latex so the smell is revolting to me. Even when I was young, I was more into the dressing up and collecting candy, but not into eating the candy itself. The most memorable parts were waiting in line for Toys R Us to open with my mom and siblings, and then when we walked in, they had a whole aisle of costumes, with the sample up at the top to show the outfit, and then all these boxes stacked underneath like shoeboxes with the mask on top, peering through hopefully at you through the plastic window at the top of the box. When you opened the box, you could smell that aroma of new new new plastic.

I am the one to the far right, Strawberry Shortcake. Superman and that bizarre blond princess are my younger brother and sister (I have on other sister not yet born). Seriously, those trick or treat containers really set a high expectation of how many treats a child will get in one night no?

It also marked the season when we would start decorating the house- for Halloween, we were just hanging things on the door and window decals which were real 3d posters, not the cling stuff you usually find now. My family didn’t do jack o lanterns, and I carved my first pumpkin in 1st grade with the help of 8th graders who came to assist at school, which then got thrown and destroyed in the street a few days later. Traumatized, I’ve only carved pumpkins one other time (an old boyfriend when I was in my 20s tried to bring the charm of Halloween jack o lanterns to me… it didn’t work.)

Pumpkin gore, and people gore, is not my cup of tea. Some of the gory presentations that I’ve seen on Pinterest for Halloween food are unappealing to me personally- food that looks like bleeding fingers or teeth or eyeballs, I don’t get it. However I saw one photo of using bell peppers to make mini jack o lanterns, and thought it was adorable!

This smoked beer cheese recipe and presentations is inspired by that idea, plus then is my version of the Beeroness’ Roasted Garlic & Parmesan Beer Cheese Dip but I decided to use a Tillamook smoked black pepper white cheddar cheese, and then used a Red Alder smoked salt rather than her suggested smoked gouda, although that also sounds delicious.

Ingredients

  • 2 large heads of garlic
  • 2 tablespoons olive oil
  • 12 ounces of cream cheese or Neufchatel (1 1/2 packages) or you can use tofu cream cheese
  • 14 ounces or 1 3/4 cup shredded Parmesan cheese
  • 6 ounces Tillamook smoked black pepper white cheddar cheese, shredded
  • 1 cup IPA beer – I picked 10 Barrel Brewing’s ISA, which is mildly hoppy but also has citrusy grapefruit and pine notes because I still have some in the fridge
  • 1 teaspoon of Sriracha or other red chili sauce or hot sauce
  • 1/2 teaspoon salt or to taste – I decided to kick it up with alder smoked salt from The Meadow
  • 1 tablespoon cornstarch
  • 1/4 cup chopped green onions
  • Bread or crackers or pretzels or whatever vehicle for the cheese you’d like for serving it to your mouth!
  • 6 Bell peppers – red, orange, yellow for serving (optional)

Directions

  1. Preheat oven to 425 degrees F. Take your two heads of garlic and carefully cut the top of each head garlic off, just enough to expose all of the cloves. Place each head on a separate piece of tin foil. Drizzle each head with 1 tablespoon of olive oil and seal the foil around the garlic. Place both wrapped garlic head on a baking sheet and roast in the oven for 30 minutes. The garlic cloves should be really softened to a point that you cold squeeze the cloves out. Remove both roasted garlic heads from oven and allow to cool. It’s ok if maybe you eat a warm clove or two to test it… I did!

Meanwhile, while your garlic is roasting, shred your cheeses and take out your cream cheese or Neufchatel out, cut into small pieces, and let warm to room temperature- if you’re using tofu cream cheese it will already be soft, yay! It is better to shred the cheese yourself rather than use preshredded cheese because the preshredded has additives that I think make it taste not quite as good, and it doesn’t melt as well. Besides, you can get better tasting cheese in the block cheese form, and it will last longer, especially when you have odd amounts like what was used in this recipe (unless you get the cheese cut for you by a cheesemonger, you will inevitably be buying 8 ounces). While my garlic was roasting I just grated while watching the Mindy Project. I love Mindy Kaling. Love. I love show she portrays a neurotic woman but unlike many other neurotic female characters often seen in TV or the movies, is only partially clueless about social cues instead of apparently so unaware that she’s clueless about basic social rules, and she is still warm and giving rather than being closed off=independence and bitchy and controlling and unreasonably demanding=smart and a leader. I can always take some more Mindy, just like I can always take more garlic or cheese, thank you.
  3. In a food processor, add the softened cream cheese/Neufchatel/tofu, 1 1/2 cup parmesan (so save 1/4 cup for later. It makes for a slightly crispy topping!), smoked cheddar, beer, red chili sauce, salt, and corn starch. Squeeze the roasted heads of garlic until the soft cloves comes out and also add these to the food processor. This is why you need really large heads of garlic, as maybe one or two cloves will be a little too soft when squeezing out and you may licking roasted garlic off your fingers. Yum. Oh, back to the recipe. I already had black pepper in my cheese, but if you are using another cheese you may want to add a teaspoon of pepper. Process everything until well combined.

  4. Place the mixture into a baking dish. At this point, I would recommend letting it chill overnight in the fridge to let the flavors develop more. Meanwhile, drink the rest of your beer bottle- unless you did already while grating your cheese. When you are ready, top your cheese mixture with the remaining 1/4 cup cheese.  Bake at 350 degrees F until melted and the top has started to turn a light golden brown and is bubbly and ooey gooey, about 35-40 minutes.

  5. Remove from oven, top with green onions, serve warm with chips or bread. For fun, I decided to cut the top portion of two bell peppers for F and I and clean out the inside so they were reminiscent of mini pumpkins, and spooned some beer cheese into them for serving.

How does this compare to the other beer cheeses I made before, the ranch cheddar beer dip version and the blue cheese and extra sharp cheddar beer spread version that I made around this time last year?

Well here’s the cheese! It has the thicker consistency like the beer spread shown in the second photo, which makes it great for putting on bread or crackers. After I took my first bite or so I decided to add a little more smoked salt on top to taste. I admit when it comes to it, even though I really like smoked cheese, my favorite beer cheeses include blue cheese in the mixture as I like the complexity of the slight sourness and fuller body it offers, though I understand not everyone loves blue cheese’s saltiness. I definitely like this recipe over the ranch cheddar version as that smokiness in this recipe gives it more oomph for me, and this was more peppery than salty (from the ranch).

The Four Seasons Farm Gardener’s Cookbook Review

Recently, I read and tried some recipes from The Four Season Farm Gardener’s Cookbook, From the Garden to the Table in 120 Recipes, authored by Barbara Damrosch and Eliot Coleman. Both have been operating the Four Season Farm for more than 20 years, and have been involved professionally in farming and teaching (both in authoring/publishing and hosting the series Gardening Naturally for the Learning Channel 1993-2003, among other credentials) for more than 35 years, with more than 75 years experience between both of them. This extensive background and experience of this couple really shows in the first half of the Four Season Farm Gardener’s Cookbook, which actually focuses on the Garden rather than food recipes-  you can interpret it really as the first half being a Garden “Cook”book, and then the second half is the Table, with the promised 120 recipes and traditional cookbook.

I have been an urbanite whose gardening skills never have been explored more than growing a few of my favorite herbs of basil, dill, thyme, and Thai chili peppers, annually, so you can take this review as someone who is a total newbie to gardening, much less farming produce or anything beyond a windowsill box.

The book starts from the ground up- literally. The first chapter helps you identify what kind of soil you have, teaches you the difference between types of soil and how to improve your soil. The next chapters expound into how to think about and then decide on the size and layout of your garden, how to rotate different crops in your garden whether it be through a single year across seasons or across years. They then present six options of different kind of garden themes varying from one that is focused on producing lots of quick and satisfying results in the smallest space (The Salad Garden) to a theme of  dependable crops (The Hard Times Garden) or one that you don’t have to reseed every year because they are perennial or produce seeds (The Self Reliant Garden).

There is one chapter that goes into depth on each possible crop (grouped by family as they require similar care in growing). One example is spinach, talking about the differences between the taste of spinach through the season, giving advice on how to grow it, then harvest it, then store it, and finally various options to cook it- and they expand this to include almost 70 kinds of produce you might be considering to grow. This is probably going to be the chapter that I thumb through over and over as I encounter beautiful items in the farmers market, as I look up the produce and read suggestions on ways to cook and enjoy it. Although this chapter is technically in the Garden portion of the book with its advice on growing and harvesting, the information on storing and cooking it are definitely Table territory.

Each of these chapters is written with the voice that has clearly done everything that has been written and can provide tips. The voice is aware of both the science of how to make decisions based on the reality of various situations and talking through all of the data and information you might use to analyze and decide or more efficiently garden (such as offering advice on tools or watering techniques or weed control)- aka extremely practical- while also catering to the art of garden as an emotionally fulfilling enterprise by detailing the rich colors and textures and beauty of nature and feeling of productivity and satisfaction of feeding plants and them feeding us in return. At one point, the authors note how as each crop is ready you feel like the year is full of “little festivals” of produce.

In this first half of the book, pictures and illustrations abound, enticing you with beautiful photos of produce  you too can grow, or step by step of saving tomato seeds, or various map layouts of gardens or charts for crop rotations. So I was a little disappointed there were not more photos in the second half for the recipes. There are definitely some beautiful whole page layouts of some of the recipes, but many recipes have no photo, or at most a small photo of one of the ingredients of the recipe but not the dish itself. I am definitely a visual person, and the recipes I tried ended up being ones that had accompanying photos of the finished dish.

Her recipes are simple (she calls her style  “prosperous peasant”), featuring the freshness of the ingredients, all from scratch and the majority of the components which can come fresh from the garden… or in my case, purchased from the farmers market and someone else’s garden. Since asparagus has been looking so beautiful at the market that was one of the first recipes I picked out to try.

Asparagus Goldenrod

This recipe comes from Barbara Damrosch and her mother, and is named for the grated egg yolk that appears like goldenrod pollen. I chose to use two types of bread (paesano and seedy grain), but did not remove the crusts (and whoever styled the dish for the food photo did not either!). As an homage to what Barbara and Eliot stand for, I used everything from the Portland farmers market or Local Choice Market except the butter and black pepper.

Ingredients (serves 4):

  • 4 large eggs (mine are from Stiebrs Farm)
  • 1 1/2 cups heavy cream (I used Garry’s Meadow Fresh Jersey whipping cream)
  • 4 ounces (1 cup) of shredded Gruyere cheese (or, since I didn’t find a local Gruyere, I used a Gruyere-like cheese, Adams Alpine from Cascadia Creamery)
  • 40 medium size fresh asparagus spears
  • 4 large or 8 small slices of whole grain bread, crusts removed
  • 2 tablespoons butter at room temperature
  • freshly ground black pepper, to taste

Directions:

  1. Hard cook the eggs by placing the 4 eggs in a saucepan and adding enough water to cover the eggs. Bring the water to simmer over high heat, then immediately lower the heat and simmer for 10 minutes. Drain the hot water and fill the pan with cold water to cool the eggs for at least 5 minutes.
  2. Peel the eggs and remove the yolk carefully so they remain whole. They should be firm enough to now grate. Coarsely chop the egg whites and set aside for the sauce.
  3. Pour the cream into a medium size skillet and bring to slow simmer over medium heat, stir, stirring constantly, until it has thickened. Gradually add the grated cheese, stirring until it has melted and is smooth. Add the egg whites, and keep the sauce warm over low heat.
  4. Toast the bread and then butter (optional), putting them on the plate you plan to serve with.
  5. Trim the asparagus spears to about 5 inches in length, and steam until the asparagus is tender, 2-5 minutes. (Or, you can roast or grill the asparagus, whatever you’d like.) Distribute the asparagus spears over the pieces of toast, and then cover with the creamy sauce. Top with the grated egg yolk and some black pepper to taste, and serve immediately.

Barbara advises that depending on the season, you can easily substitute broccoli, cauliflower, green beans, leeks, garlic scapes, etc for the asparagus. For most of the recipes there is a “Try This Too” section that suggests some variations to try. She often also suggests other dishes to serve with to make a complete complementary meal. She suggested a salad and a dessert of fresh fruit for this, but I made her Green Gazpacho that celebrates the bounty of greens with green pepper, celery, scallions, jalapeno, parsley, cilantro, and chives. Barbara also notes that you might also try adding green tomatoes, or tomatillos, to this “chlorophyll explosion, refreshing and pungent”.

Green Gazpacho

Ingredients (serves 4 as a main course, 6-8 as an appetizer):

  • 1 medium to large green bell pepper, stemmed, seeded, and cut into small chunks (approximately 1 1/2 cups)
  • 1-2 (I used 2) green jalapeno peppers, stemmed, seeded, and chopped
  • 1 medium size cucumber, peeled, seeded, and coarsely chopped (approximately 3/4-1 cup)
  • 2 medium sized ribs celery, coarsely chopped (approximately 2/3 cup)
  • 6 scallions (white and green parts), coarsely chopped (approximately 1 cup)
  • 1 cup (packed) fresh flat-leaf parsley leaves
  • 1/4 cup (packed) fresh cilantro leaves, or to taste
  • 1 tablespoon agave syrup or 4 teaspoons raw sugar
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh lemon juice
  • salt and freshly ground pepper
  • 1/4 cup extra-virgin olive oil (I happened to use blood orange olive oil)
  • 1/2 cup sour cream (you can also substitute tofu here)
  • 1 tablespoon very finely chipped fresh chives

Directions:

  1. Combine the bell and jalapeno peppers, cucumber, celery, and scallions and stir briefly. Put half the mixture into a food processor with 1 cup water and pulse until the mixture is just pureed, about 30 seconds. Return this to a large bowl (I used one that was 2.5 quarts).
  2. Repeat the above with the second half of prepped veggies + 1 cup water , but this time also adding the parsley, cilantro, agave syrup, lime and lemon juice, dash of salt and black pepper. Combine both purees in the large bowl, and add the olive oil and stir to mix. Taste and add salt or ground pepper as desired (this soup tastes best with enough salt to accent the flavors).
  3. Refrigerate if not serving right away. When serving, pour the gazpacho into individual bowls or glasses. Top each serving with 1 to 2 tablespoons of sour cream and a pinch of chives.

Saison Beer Ricotta on Cucumber

Inspired by the Beeroness’ Homemade Beer Ricotta, for a beer potluck get together I decided to make this the third offering of beer cheese. I decided to make three times the amount in her version since I was feeding more and hers yielded ~1 1/4 cups of ricotta at the end. My usual ricotta recipe is with a half gallon of whole milk and pint of buttermilk, and I have never had to throw any away, so I figure more is better (so you’ll see a lot more yield in my photos). In the end, I only needed double of the original recipe to make about 45 slices from 2 cucumbers worth.

I then put the beer ricotta on sliced cucumbers as appetizers. For the beer, I used Portland U-Brew Saison, which was a citrusy addition to the creamy ricotta.

It is important that you don’t use Ultra-Pasteurized milk, because it does not have the important calcium chloride which is needed for coagulation and curds (the pasteurization process removes calcium). Whole milk is better because it will also taste richer, as the flavor of the cheese is related to the amount of butterfat in the milk.

Ingredients:

  • 3 cups whole milk- use the best and freshest milk you can find
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/3 cup Saison beer and also 2 tablespoons of Saison Beer separated for later
  • 3 tablespoons Lemon Juice, or you can use Apple Cider Vinegar or a combination of the two
  • 1 English cucumber
  • ground pepper to taste

Directions:

  1. Cheesemaking is 4 main ingredients: milk, heat, acid, and then extras (any additions like herbs or mold, or aging, or handling and atmosphere like pulling it, smoking, etc). So first, the milk and heat. Combine the 3 cups whole milk and the 1 cup cream and 1/3 cup of beer in a non-reactive pot and heat on your stovetop on medium.
    The Beeroness’s version puts the salt in now, but I held off until later to put it directly on the ricotta- your choice. I am accustomed to adding in the extras after the acid step because that’s when it is done with the steps to make a goat cheese chevre.

  2. Use a thermometer to track when the contents of your pot reaches 190 degrees F, stirring as you watch so avoid scorching, and scrape the bottom as you stir.
  3. As soon as you reach 190 degrees F with your milk/cream, immediately remove the pot from heat and add your acid, which is the apple cider vinegar/lemon juice. This is the acid to start the curdling process. Stir just a little to get the acid throughout your milk/cream, and then let the heat and coagulation process work.
    You will start to see the white chunks (curds) rise to the surface away from the yellowish part (whey). The Beeroness put in the 2 tablespoons of beer at this point, but I held off as I didn’t want to lose the beer in the whey.making homemade ricotta
  4. Next, time to separate the curds and whey. use a cheesecloth over a strainer such as a large sieve or colander over a larger mixing bowl. I happen to have both a large and smaller sieve so I lined the larger one with the cheesecloth folded in half, and used the smaller one to ladle the curd and whey mixture through the sieve as an initial drain of whey. Place the curds into the cheesecloth so that the curds will stick with the cheesecloth and the whey flow below to the bowl.
    This is the part where I added the salt and drizzled the saison, adding a small little bit with every layer as I ladled. Run your wooden spoon along the bottom of your pot to free up any stuck curds partway through the pour, and they may need to be scraped from your smaller sieve ladle.making homemade ricotta making homemade ricotta
  5. You can pull up on the sides of the cheesecloth to drain off any extra liquid, but don’t press on the curds. Gather the edges of the cloth and fasten them into a knot and over the bowl so the whey can continue to drain for at least another 15-20 minutes. The longer you let it drain, the more firm it will be instead of creamy.
  6. You can move to an airtight container and put in the refrigerator if you aren’t going to use immediately, and you should eat it within a few days while it is nice and fresh. Meanwhile, what I did was take my English cucumbers and slice them to about 1/3 inch thick. Remember your yield will be less than pictured because I upped the recipe for more yield.

  7. When the whey had finished draining from the cheese, I just spooned a smear onto each cucumber, and finished with a pinch everywhere of salt and ground pepper

I kept mine simple because I wanted the subtle taste of the saison to still be detected, but this cucumber and ricotta idea can certainly be further elevated by more additions on top, such as herbs or half a cherry tomato, etc! Meanwhile, since I had tripled this recipe, I still had a good leftover portion that I have been eating with pasta for dinner.
