Recipe for Lentils with Roasted Tomatoes and Horseradish

I’ve shared my thoughts on the Anna Jones cookbook A Modern Way To Cook previously, as well my favorite recipe from the book for homemade crackers. This cookbook brings together more then 150 vegetarian recipes in unique flavor combinations, and one that had caught my eye and that I was saving for summer tomato season was one for Lentils with Roasted Tomatoes and Horseradish.

Lentils are super affordable and healthy, full of nutritional benefits such as high dietary fiber, lean protein, iron, folates, vitamin B6, manganese, thiamin, selenium ,and more. This makes them great for heart health, helps fight fatigue, can help with weight control since it helps you feel full, the fiber is good for digestion, and the selenium in lentils (not found in many foods) can improves immune response to infection by stimulating the production of disease-killing T-cells and helps detoxify some cancer-causing compounds in the body.

This dish is also, importantly, delicious. It is tasty with the creaminess but healthy comfort of the lentils, the cold contrasting shock of the horseradish sauce, the burst of the roasted grape tomatoes, and the crunchiness of the breadcrumbs. The only expensive ingredient is the horseradish sauce – the recipe calls for cottage cheese, but you can use silken tofu, vegan mayo, or vegan cream cheese too.

Brunch at Broder Nord

There are always lines for the Broder restaurants at brunch on the weekend for their unique Swedish cuisine – but I’ve never experienced them. That’s because though I love Broder, I go on the weekdays because they offer brunch everyday 8 AM – 3 PM, not just on weekends! For an example of my favoriter Broder dishes, here’s a look at my brunch at Broder Nord.
Brunch at Broder Nord - Lefse, a Norwegian potato crepe filled with rotating ingredients (mine was Havarti and salami) topped with baked eggs and served with mixed greens; Aebelskivers (Danish Pancakes) served with lingonbarry jam and lemon curd; Smørrebrød, Danish Open Faced Sandwiches where you can choose two of five options, we picked the Gravlax with shrimp skagenröra, radish, mustard sauce, microgreens and the Beet and Asparagus with asparagus, beets, and chevre; and at the top Förlorade ägg (Lost Eggs) a dish of 2 eggs on a bed of sliced ham and spinach baked under breadcrumbs in a skillet

Shipwreck PDX at Taqueria Nueve

Last month in May, Shipwreck PDX popped up at Taqueria Nueve. They will be back next week on July 10 but with an update to now be working with one of my favorite burger joints in town, Burger Steven’s, and burger food cart of chef Don Salamone. Lunch at Jake’s Famous Crawfish

When I entertain visitors to Portland, I try to always provide a mix of visiting some restaurants that are trendy and new but also some Portland classics that are tried and true. While my mom was visiting for a few days, I decided to fulfill her request for a salad with avocado. That at first flummoxed me as I tried to rack my mind for outstanding avocado salads, but then I suggested also along  with avocado perhaps some seafood for lunch, and boom our destination is a classic lunch at Jake’s Famous Crawfish.

TD’s Pop Up, Tacos Al Fresco at the Waterfront

TD’s Pop Up is back! Started in 2014, this summer pop up has been returning just for the summer every year, and is found outside of the Three Degrees restaurant located behind the River Place Hotel, right along the South Waterfront with views of the the Hawthorne Bridge and Tilikum Crossing and perhaps some Dragon Boats practicing on the river. I can’t think of any other downtown location you can eat this close to the river unless you’re on a boat or pier. The premise here is simple: tacos, tequila, and dining al fresco at a small seat counter top bar or high top cocktail tables literally a few yards from the Willamette River on the esplanade or seats on the hotel restaurant patio.
