Txoko Experience with Urdaneta

I was pretty excited when I heard that Urdaneta was bringing back an instance of Basque Supper Club with the theme of Txoko! Going to txokos with his grandfather had inspired Chef Javier Canteras to open Urdaneta and create Basque Supper Club. Now it was coming around full circle as the documentary ”The Txoko Experience: The Secret Culinary Space of the Basques”, along with scriptwriter, Marcela Garces, was making a West Coast premiere showing at Urdaneta. The restaurant was closed for this private event on a Sunday evening, and the night included watching the movie in the restaurant, and then enjoying a multi course dinner of Basque cuisine. Here’s a look at my Txoko Experience with Urdaneta.

Txoko (The “Tx” in Basque language is pronounced Ch, Cho-ko, with ch hard like the ch in in chocolate), is essentially a dining club that allows members to gather together in a space (often a restaurant kitchen and dining area) and cook and dine together outside their home, which are often apartments.

It’s more then just food though- the txoko is an escape from family to be with the community that only sees what you are good at cooking (or maybe you’re a good singer), regardless of what you do for your day job. It’s an environment of good food, good conversation, and apparently, also group singing. We didn’t sing at this dinner, but there was definitely the wonderful food and conversation and everyone attending and working was in excited, cheerful spirits.

Picks for Portland Dining Month 2018 + Giveaway!

Portland Dining Month 2018 is almost here! Every year since I’ve been going (since 2012!), I do my due diligence reviewing who are the participants. I’m trying to help you out by sharing my work – this year more than 120 local restaurants are participating. This year, not only will I share my picks for Portland Dining Month 2018, but thanks to partnering with Travel PortlandI am doing a Portland Dining Month giveaway that nets you a $70 gift card to a Portland Dining Month participant! Giveaway has completed – but my recommendations are still good for all of March

A full list of participating Portland Dining Month restaurants and their menus can be found at the official Portland Dining Month list and map on the Travel Portland website. As usual, making a reservation though the Portland Dining Month website can also benefit the local community. Travel Portland has partnered with OpenTable for the eighth year. A donation will be made to Oregon Food Bank for every online reservation booked at participating restaurants through PortlandDiningMonth.com – just click on the OpenTable reservation button next to the restaurant listing.

I highly encourage using this, not just for the fact you are doing good to fight hunger by using the OpenTable online reservation systems, but some places can get pretty busy so to avoid an annoying wait, make reservations with whoever takes them to spend less time waiting and more time dining. OpenTable is free, you even earn points that you can redeem for gift certificates, I’ve been using them for years! There have been times my miraculous ability to make a reservation for my dining group within minutes has made me a hero – and it was because of OpenTable’s list of restaurants in an area and who has openings.

How I made the list: I review the menus each participant will offer for Portland Dining Month. Some restaurants make the list because their deal of three course dinners for just $33 is a huge savings from their regular prices. They must also offer intriguing menu options that either show off their strengths or can even be specials just for Portland Dining Month.

March is Portland Dining Month 2018

Just because it’s not on my list doesn’t mean it’s not a good place for you to go. Sometimes it just may be their Portland Dining Month dishes are regularly on their menu but at not enough of a price difference from regular prices (which I also count if the dishes are available at discounted prices at happy hour, or a special deal on a weekday) to make my list. Other times I may think some of their regular menu options are better then the Portland Dining Month dishes they are serving up. It may still be perfect for you to try and a wonderful experience. Animating Life, the Laika Exhibit at Portland Art Museum

I’ve seen all the Laika movies – first Coraline, then ParaNorman, Boxtrolls, and finally the most recent (and my favorite), Kubo and the Two Strings. If you haven’t heard of Laika, they are a Portland stop-motion animation movie studio. Think of them like our local Pixar, bringing storytelling to the screen that appeals to adults and children. Recently the Portland Art Museum opened a special Laika exhibit Animating Life that showcases some of the behind the scenes of how Laika created those movies, and it’s worth a visit. The exhibit runs until May 20.
At the Laika exhibit at the Portland Art Museum, this display shows how Laika scaled the giant skeleton (here 18 feet, which is 1/5 scale of the 90 feet in human scale the monster is in the story) to the average height of the other characters Kubo (9.25 inches), Monkey (13 inches), Beetle (21 inches), and Hanzo Origami (2 inches). Merry Christmas! Santas and Cookies and Casseroles!

I want to wish a Portland Merry Christmas 2017 to everyone! If you’re in Portland, you know we got a surprise on Christmas Eve during the day in which we got snow! That snow stuck (along with icy rain layers) to make for a white Christmas, yay! I had purchased some Christmas flowers for myself and left it out for 5 minutes or so to get the contrast of the snowflakes.

For fun, I just wanted to write a quick post on our plans this year. 2 years ago, F and I spent Christmas in Japan, and last year we spent it apart while I was in LA with my new 3 month old niece and family. This year both of us are staying in PDX, though it isn’t as fun as I hoped because he currently is sick and is congested and gross. Thankfully, I have Santa displays from town to keep me in a cheerful mood.

Another Santa display this year was by Pioneer Courthouse Square, the Santa Clones. The Santa Clones have been around Portland for several years, where everyone doesn’t exactly disclose the address but you get hints at where they are, so it is a mini quest to find them.

Last year for the holidays I made a Biscuit and Sausage Gravy Egg and Cheese Casserole. You can find the recipe here, but here’s a picture just to get you in the mood – super easy to prep the night before if you want so you pop it in the oven and enjoy in your PJs all day. This year for New Year’s Day brunch I’m planning on making a Savory Shrimp and Oatmeal, lots of crispy bacon, and a Croissant Breakfast Casserole.

For Christmas Day I’m all about Dorie Greenspan’s 3-Ingredient Almond Crackle Cookies which were super fast to make and only 3 ingredients – though I ran out of almonds so I also mixed in some chopped pecans so technically I guess my cookies were 4 ingredients. They are not the most beautiful cookies because of the dough being thin so they tend to be free-form shaped, and they are thin and crispy. I won’t reprint the recipe here, but I did link to it.

My mother in law also sent us these amazing Juustoleipa (yoo-stoh-lay-paa), which means “Bread Cheese”, a buttery flavored baked cheese that has been produced in Finland and Sweden for over 200 years. And this adorable plate is from West Elm.

Lardo PDX Chefwich with XLB – Char Siu Reuben

I have given a lot of love to Lardo in the past, in particular their Chefwich series which spotlights a collaboration with a local chef with a portion of the sales going to a charity near and dear to that guest chef’s heart. For December, the chefwich spotlight is to XLB‘ s Jasper Shen + Laura Tran. Together, they created a Char Siu Reuben that stars roasted Chinese pork, spicy cabbage, Swiss, XLB secret sauce on griddled rye bread.
