Portland Drink and a Bite Highlight: Imperial

For Foodie Friday today, I wanted to start a series highlighting a Portland Drink and a Bite of food that I think not only is best in class within Portland, but is a classic representation of the character of Portland. Of course, that Portland Drink and a Bite Highlight is also delicious, and unique.

For the first highlight, I go to the first duo I craved when I returned from being away for 3 weeks or so – the A Radish Walks Into A Bar… cocktail at Imperial.

Crafted with Carpano Antica vermouth, Ransom Old Tom gin, lemon, radish gastrique, cracked pepper and salt, and served with a beautiful cube of ice (sourced from PDX ice) that they hand carve from an ice block. This unique cocktail is savory and sour and sweet (it’s name is a nod towards Chef Vitaly Paley’s win in Iron Chef with radish as the secret ingredient). And this cocktail is one of my top 5 favorites in Portland. It’s the best radish cocktail I’ve ever had, and I keep going back to it.

Apparently Portland Monthly agrees with me – it listed it among the Top 10 Cocktails in PDX in March 2015.

I don’t even have to look at the menu – as soon as I sit down (usually maybe once a month or so) at Imperial, I order this cocktail right off the bat, along with a Parker House Roll.

This is the best Parker House Roll I’ve ever had – larger then your fist, served warm with whipped butter and Jacobson sea salt, it’s buttery delicate softness with a hint of sweet is a perfect match for the slight peppery bite of the Radish Walks Into A Bar cocktail, making it a great starter. Every time I go into Imperial, I order the cocktail and roll. I’ve even done this when I was on my way walking to meet others for drinks and dinner – I stopped and got this first!

The rest of the Imperial kitchen and bar is firing on all cylinders, so feel free to add to your meal with a grilled salad, Dougie’s fried chicken, or many other items on the menu. This particular Portland Drink and a Bite feels like it really embodies Portland to me in it’s celebration of Chef Paley with that creative cocktail, paired with a nod towards James Beard with those Parker House rolls, and it gets you into the door of Imperial with it’s Northwest cuisine.

Beer Brunch at Burnside Brewing

Are you looking for a brunch without a line and long wait but all the goodness of homemade biscuits, fried chicken, eggs Benedict, french toast, steak and eggs… And is flexible enough to be casual with friends and also family friendly, offers a nice patio to dine outside, and serves brunch on Saturday and Sunday? How about also offers a Bloody Mary or a Beer Brunch with a beermosa? Did you even know you could get all those things at Burnside Brewing?

That’s right, Burnside Brewing is more than the beers they brew and a brewpub offering an excellent burger from their kitchen for lunch and dinner daily. During the respectable hours of 11 AM – 3 PM on Saturday and Sunday, they offer a brunch menu.

Although Burnside is a brewery offering beer, they also have a full bar and wine. That means that you can definitely get your Bloody Mary on here, and they are happy to make you a Beermosa, aka a beer with orange juice. You’ll even get a choice of beer for the beermosa, I recommend the Sweet Heat, a wheat beer brewed with Apricot and Scotch bonnet pepper and 2012 GABF gold medal winner, for a little added heat. Don’t worry about getting too much burn – I thought their Bloody Mary was much mroe spicy than the beermosa with Sweet Heat, though the spiciness of the Sweet Heat does vary by batch. Ask for a little taste of the beer if you’re unsure.

Ask what is the Brunch Board for the day – it changes up often, here you can see it’s a flatbread with ricotta, tomato, olive oil, mushroom, and egg. I enjoyed it as a starter as we were still working out among the group who was ordering what – order it at the same time as your drinks to share.

Inevitably multiple people in your party will be drawn and want to order the Fried Chicken & Cornbread Waffle served with Bee Local honey butter and maple syrup. Don’t fight! Just order the dish for the table.

Also to share for the table get the incredible Thick Cut Bacon, and the perfect mix of crispy and melt in your mouth of the Crushed Potatoes with romesco and herbed crema.

Burnside Brewing Brunch also offers a few new brunch options beyond the regular that you might want to consider. For instance, there’s the Burnside Hot Brown featuring texas toast, grilled turkey, bacon, mornay, and tomato.

I personally went with the Croque Madame with country ham and gruyere in a brioche sandwich, then topped with mornay and sunny up egg.

Rosemary and Cheddar Breakfast Sausage Dip

A incredibly delicious recipe I made for brunch one weekend was this Rosemary and Cheddar Breakfast Sausage dip.

The original inspiration that I only did minor tweaks came from the Food Should Taste Good website recipe for Brunch that users breakfast sausage, maple syrup, cheddar cheese and fresh rosemary. They got the recipe courtesy of Amanda Paa of heartbeetkitchen.com. My minor change as that I used sage breakfast sausage and removed the use of salt as I’m not a huge fan of too much salt and I also had some leftover sage that I minced and added as well to help highlight the sage in the sausage I used.

I’ve written about Food Should Taste Good chips before based on an event I attended and made a Mexican Street Corn dip with their Blue Corn Chips, and then again with a Caramelized Onion Jam and Goat Cheese with Sweet Potato Chips.

These  are the Food Should Taste Good multigrain tortilla chips that are paired with this dip are gluten free, GMO free, and include healthy ingredients such as brown rice flour, flax, sunflower seeds, sesame seeds, quinoa, and stone ground corn as well as rosemary extract, which will echo the bit of rosemary in the dip.

And, it was a great way to use some of the leftover grated cheddar cheese I had grated (I grated 36 ounces of it for the cheddar fondue recipe I posted earlier on Monday!)

Ingredients:

  • 8 ounces of breakfast sausage
  • 1/4 cup minced onion
  • 3 cups freshly grated cheddar cheese (9 ounces)
  • 2 1/2 tablespoons corn starch
  • 1 1/2 teaspoons fresh rosemary
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups milk
  • 1 tablespoon of maple syrup
  •  bag of Food Should Taste Good Multigrain Chips for serving

Directions:

  1. In a medium sized skillet over medium high heat, add the 8 ounces of breakfast sausage. Crumble it as much as you can as you add it to the plain skillet, and as you cook the sausage crumble it some more to break it up and stir.
  2. When sausage has just a little pink remaining, add the 1/4 cup of minced onion and continue cooking, until meat is no longer pink and onions are translucent. Drain meat (separate it from the oil that emerged – I save the oil in a container to use for fried rice or something else) and set aside to cool.

  3. In a bowl, toss together the 3 cups of freshly grated cheddar cheese, 2 1/2 tablespoons of cornstarch, 1 1/2 teaspoons of rosemary, and 1/2 teaspoon of garlic powder. If you use pre-grated packaged cheddar cheese it already has cornstarch and other preservatives in it – I recommend grating the cheese fresh!
  4. In a medium sized saucepan, combine the 1 1/2 cups of milk and 1 tablespoon of maple syrup. Turn the heat to medium and stir constantly while it warms to steaming but not burning. Once it starts steaming, add your cheese rosemary dry mix and continue stirring as the cheese melts.

  5. Once the cheese is melted and smooth, add the sausage and stir is to distribute the sausage evenly. Pour into a container and serve with the chips!

This dip is so good I can imagine folding a few spoonfuls into an omelette as well. This feeds 6 people and refrigerated well – I just warmed it up before serving again. I served mine in mini-ramekins with the chips. It’s great for if you have guests staying over for a little fancy extra breakfast side, or just to treat yourself on a cold morning – I justified the healthy multi grain chips as making this cheese and mat dip totally balanced.

If it looks sorta fondue-y… you’re right I thought the same thing! Obviously this isn’t vegetarian, which I wanted for my party, but for brunch for myself, sausage and bacon are fair game right?

DarSalam Lazurdi

I was thrilled to hear that DarSalam, which started as a food cart and then opened a brick and mortar restaurant in Northeast Portland on Alberta was going to open a second location right in downtown at 320 SW Alder, called DarSalam Lazurdi. I have high hopes that this will open up exploration of their Middle Eastern cuisine with a few special Iraqi dishes from their hometown of Baghdad to a larger audience.

Their lunch buffet that they offer Mon-Fri 11:30-3:30 is a huge bargain, with the to go buffet discounted $2 from the regular dine in price of about $12. They also serve happy hour (4-6 PM Mon-Fri, 2-5 PM on Sat) and dinner (6-9 PM Mon-Sat) and full bar available alongside their vegan, gluten free, and halal options or conscientious of the lactose intolerant.

When I tried their lunch buffet, there was a big bounty of options to choose from and my plate was super heavy even though I took only one spoonful of everything they had on the line that day. In fact, I had to leave out the soup in my first pass, and one dish (pickled mango salad) ended up in that soup bowl instead because I was just out of room despite my careful trying to just taste everything.

The downtown space is gorgeous with lots of bold royal blue and gold colors. The new larger location has room and plans for live music and belly dancing on weekend evenings.

The service is kind and respectful with a bit of homeyness and humility. You can order from the menu during lunch so you aren’t restricted to the buffet, but it will be slower than the obvious serve yourself of the buffet line. You go to the register at the end to pay your bill.

Even after a second trip to the buffet, my wonderful group of women lunching with me stepped up to ordering all the desserts to share between us. And it was the perfect ending.

As much as you enjoy the food at the buffet, don’t miss leaving a smidge of room for the desserts. Their menu could include some desserts you may not have ever heard of before beyond your usual classic:

  • Baklava, a honey and roasted pistachios rolled up in layers of crisp phyllo dough. The use of pistachios here instead of walnut is what makes it Middle Eastern instead of Mediterranean

I was too stuffed from that first lunch to try the Iraqi shredded meat plate, so forced myself (ha ha ha… it was the bare-bones rationalization I needed to justify a return trip) to come back to try those dishes for you. This is Iraqi style tender shredded meat – your choice of chicken or lamb. I went with chicken.

It can be served as an appetizer with your choice of hummus, baba ghanoush or tahziki and flatbread. Or, have it on salad on a bed of greens, or as a main dish atop a bed of basmati rice with a dollop of chickpea marga and with a side of soup or salad. During happy hour, you can have it as an Iraqi Shawarma.

I like it as the rice plate because it means you get the chickpea marga too and a pretty substantial cup of the Adis, a lentil soup. And, it pretty much means you now have 2 meals from that one order – I had it for dinner two different nights with the leftovers as my second meal.

On my other visit as we awaited our food, we were given a complimentary pita with za’atar dip of the za’atar spices in olive oil.

We shared an appetizer of the Mixed Dolma with onion, zucchini, and grape leaves stuffed with rice, diced vegetables and spices infused with sun dried tomato and pomegranate. My favorite are the dolma stuffed in onion rather than the grape leaves.

The Falafel here instead of being round balls are more doughnut shaped and much bigger! Here they came part of a Vegan Mezza Plate (on the regular Mezza menu, but that was also part of the happy hour menu) that included the Hummus, Baba ghanoush (smoky roasted eggplant ground with tahini, garlic, lemon juice and garnished with zaatar and olive oil), pickled mango salad, and three falafel (made from ground chickpeas and spices cooked to order from scratch

If you order the Arab Coffee, know that it’s a pretty thick and dark coffee, with a hint of cardamom sweetness. They are served in authentic Iraqi sipping glasses and you can actually get refills of it! Do NOT drink to the grounds.

There is also a pretty interesting cocktail menu here that uses a lot of the spices and rose water in the beverages to give you the flavors of the Middle East. On the left you see a special which I think was being rotated out of the menu for December, a Rabbit’s Foot with VSOP Brandy, Luxardo, Cardamaro, Creme de Cassis, Green Chartreuse and Orange Bitters. On the right, I was tasting a preview of a new drink that might appear on the menu, the Philippe that takes advantage of the housemade mango juice they offer with rose water.

You can dine at this DarSalam Lazurdi location downtown, or on their website you can even get delivery of their menu items from Delivery Dudes. If you visit this coming Sunday December 13th from 1 – 5 PM, DarSalam is hosting a Holiday Stop & Shop with small local businesses with appetizers on them as you do a little holiday shopping, and 15% of their proceeds will go to the work of Mercy Corps with Syrian and Iraqi refugees.

Salt Fire Water Dinner with Salare and Renata

Last month in October, I attended the Salt Fire Water Dinner with Salare and Renata. If you haven’t heard, the #SaltFireWater is a dinner series held at Jacobsen Salt Co. and Bee Local’s Headquarters in Southeast Portland and presented by Williams-Sonoma Open Kitchen.

The two chefs take turns providing dishes for a multi-course dinner that highlights the artisanal salts from Jacobsen Salt Co and honey from Bee Local and ingredients sponsor New Seasons Market. Then all guests eat at a beautiful table together like one big dinner party in a single seating after an initial wine and passed hors d’oeuvres. An Oregon wine producer is always featured as part of the meal experience.

This dinner brought together two chefs who have just recently opened restaurants in the past few months in Seattle and Portland. From Seattle we had food by Chef Edouardo Jordan of recently-opened Salare (formerly chef de cuisine at Bar Sajor in Seattle). From Portland, Salt Fire Water brought to pair up with Chef Edouardo the chef of the Oregonian’s Restaurant of the Year, Chef Matthew Sigler of Renata. Although I’ve yet to dine at Salare, I’ve visited many times and raved about Renata previously. Their dishes were paired with Love & Squalor wines.

Let’s take a look at the courses!

First: Passed Hors d’oeuvres

During the first 30 minutes or so, after hanging up your coat on a coat rack you can visit the Jacobsen Salt and Bee Local sample table to try out the latest new flavors and really appreciate the bounty of richness of the various products. I’m a huge fan of the Bee Local Honey flavors of White Oak Smoked honey and Cherry Wood Smoked honey, and I can never turn down a sprinkle of Jacobsen White Truffle Salt or Black Truffle Salt, and crushed on the Stumptown Coffee Flake salt.

The Love & Squalor wine during the passed appetizers time was a 2014 Pinot Gris from Willamette Valley that I might have had 2 glasses as it was so refreshing and paired so well with every single bite or even just tastes of the salt and honey. On hand pouring was winemaker and wine geek Matt Berson himself, as well as his wife and the artist behind their wine labels, Angela Reat.

One thing that is hard with Passed Hors d’oeuvres is that I get caught up chatting with people so I think I missed one of the bites from Renata, a Kohlrabi and Apple shooter with Dungeness Crab and Jacobson Chili Lime Salt . I started out though with a bit of Parsnip Soup with Matsutake Mushroom and Jacobsen Black Garlic Salt prepared by team Salare.

Parmesan Fritter with Bee Local Honey and Jacobsen Truffle Salt, Prosciutto, and Ancient Heritage Dairy Isabella cheese by Renata was another messy bite (you had to smear and pick up at the same time) but it was incredibly delicious. I may have had like 3 or 4 of these.

Fourth Course

For the entree, a Mushroom Stuffed Quail with Jacobsen Salt Baked Celeriac, Carrot, and Almond Pesto by Renata was paired with Love & Squalor wine a 2012 Pinot Noir. I thought I was already pretty full, but somehow found room to clean this outstanding plate of flavors and textures absolutely and completely.

Fifth Course

Dessert was Gingerbread Layer Cake with a touch of Bee Local Bee Pollen, Molasses Ice Cream, Pomegranate Caramel, Bee Local Honey and Pear Compote. The Bee Pollen is from Damian Magista of Bee Local’s own backyard hive!
