Avocado Breakfast or Brunch Recipes

These Avocado Breakfast Recipes or Brunch Recipes are very simple ways to eat avocado, but so satisfying. I don’t know if I can really call them all of them recipes as much as ideas that are self explanatory. And they are my favorite ways to incorporate avocado into a breakfast or brunch.
The delicious ways to incorporate California Avocados into your breakfast or brunch. When removing avocado, I like to cut them and then peel off the skin rather then trying to scoop the avocado from the skin!

The most obvious way is of course with a breakfast burrito. I decided to make one with bacon and jalapeno with avocado spread This is the recipe for 1 portion, for 1 person.

Bacon Avocado Jalapeno and Cheese Breakfast Burrito

Ingredients:

  • 1 avocado, pitted
  • 1/3 of a  jalapeno, finely diced (your call on the seeds)
  • 1/2 of a lime for the juice (about 1 tablespoon)
  • 1 slice of bacon
  • 2 eggs, beaten
  • 1/4 cup of cream
  • pinch of salt
  • freshly ground pepper, to taste
  • 1 flour tortilla
  • 1/4 cup of shredded Mexican cheese

Directions:

  1. In a small mixing ball, add the avocado (I like the cut the avocado in half and then peel off the skin rather than trying to scoop the avocado out of the skin) and the lime juice and mash together.  When you chop the jalapeno, it is your choice whether to leave the seeds in for heat, and how much seed to leave in (I only left in 1/4 the seeds of the whole jalapeno) – add this in as well and mash together. When I made mine, I made 3 avocados worth and with the rest I added some crumbled queso fresco and served it with the breakfast burrito.

  2. On a cold frying pan, add the slice of bacon and turn up the heat. Cook the bacon, turning it halfway, until crispy. Set aside on a paper towel to absorb excess oil and to cool so that you can later crumble it into the breakfast burrito.
  3. In the pan, I poured out the bacon fat until only about 1/2 tablespoon was left (I reserved the rest for other cooking. If you are making multiple portions at once, you can leave more in the pan). I then poured in the egg and cream and scrambled, adding a pinch of salt and bit of freshly ground pepper to my taste.
  4. On 1 flour tortilla, spread out the scrambled egg in the middle, and then crumble the bacon and add on top of the egg. Sprinkle the shredded Mexican cheese (a mix of cheddar, monterey jack, and asadero and queso quesadilla cheese), and then add 1 1/2 tablespoons of the avocado jalapeno mixture.

English Muffins and Avocado

Another way is after toasting some English Muffins, I scrambled some eggs and instead of a rich Hollandaise sauce, I just sliced up 1 avocado and added a sprinkle of some shredded triple cheddar cheese and it was luxurious without all the fat.

Or on a weekday, I simply mash 1 avocado in a bowl and spread it on toasted English Muffins, top it with sprinkles of queso fresco or cojita cheese, and off to the rest of the workday we go!

Soba Noodles with Kale, Miso, and Avocado

Recipe for Soba Noodles with Kale, Miso, and Avocado, vegetarian and gluten free and healthy and easy!
When I was gifted a few avocados from the California Avocado Commission, I knew that I wanted to try one of the recipes I’d seen and pinned a while ago from A House In the Hills: Soba Noodles with Kale, Miso, and Avocado.

I added ginger and red pepper flakes for mine for a little more heat and burn, and used the kale that I could find even though she had recommended dino kale. After prepping and mixing it, I then put it in the refrigerator to chill for a couple hours to make for a refreshing lunch on a hot summer day that is also healthy!

Make sure you taste your miso avocado sauce several times- the guidelines here may vary based on how salty your miso may be and your preference levels. Serves 4.

Ingredients:

  • 2/3 package of buckwheat soba noodles (enough for 4 servings – usually 1/2 a bunch is 1 serving. I used King Soba Organic Sweet Potato and Buckwheat Noodles)
  • 1 teaspoon of sesame oil
  • 1 small bunch of kale – mine came out to about 4 cups
  • 1 ripe avocado
  • 1 clove of garlic
  • 1 tablespoon olive oil
  • 3 tablespoons miso – I used shiso miso
  • Juice from 1/2 lime (about 1 tablespoon)
  • 3/4-1 cup of water
  • 1/2 teaspoon of ground ginger
  • 1 teaspoon of red pepper flakes
  • 1 tablespoon of sesame seeds plus additional to garnish
  • freshly ground pepper to taste

Directions:

  1. Cook the soba noodles according to directions in unsalted boiling water. Be careful that you do not overcook them as when you add the avocado miso dressing later it will be adding a lot of moisture and can make them soggy (unfortunately I made that mistake with this batch, but I’m warning you not to!). After they are ready, drain and rinse with running water at least twice to wash off the extra starch. I might even recommend using chopsticks or a fork to lift and swish the noodles a little bit in the new water to make sure the starch is washed off all the noodles. Then mix with 1 teaspoon of sesame oil, distributing well so the noodles will not stick together. Let cool.
  2. While the soba noodles are cooking, cut the kale leaves from the stalk and into either ribbons or small bite size pieces. I then mixed in the kale leaves with the still steaming hot noodles and sesame oil so they did wilt a little. Depending on how much you like kale, you could also consider a quick blanch to soften it further, but the mixing with the hot soba for me was enough.
  3. In a food processor, combine the pitted avocado, 1 clove of garlic, 1 tablespoon olive oil, juice from the 1/2 lime and 1/2 cup of water. Puree, and then taste and continue to add the water and mixing until to your taste. The consistency should be a silky sauce. I happened to have used 1 cup or so to balance out the saltiness of my miso. bring large pot of salted water to boil, add noodles and follow the package instructions to cook
  4. In a large bowl, mix the soba noodles, kale, and avocado miso dressing until well combined. This is when I also added the ground ginger, red pepper flakes, and tablespoon of sesame seeds and ground pepper to taste.

  5. When well mixed, chill in the refrigerator for a couple of hours if you can, and enjoy cold! When serving, feel free to garnish with another little sprinkle of sesame seeds. You could also add tofu or fish or other protein of your choice on top!

Sides for your Fourth of July Weekend

I thought I would pick out some of my recommendations for Sides for your Fourth of July Weekend from my recipe archives.

Well, not all of them are from the archive. This initial one is merely a suggestion and guideline. First, you could start off with a patriotic Red, white, and blue potatoes dish (ok, purple potatoes but close enough) for breakfast. You can do these in a skillet like here, or you can roast them in the oven or even put them on the grill and make it a bbq side if you’d prefer.

Season how you’d like- I don’t know if I ever make them the same way twice as I quite liberally open up my spices and seasonings to pull things out and keep tasting until I like it. You’ll definitely want salt and pepper of course, but sometimes I use cumin, or rosemary, or dill, or chili powder, or onion or garlic powder (or I’ll throw actual diced onion or minced garlic in), the possibilities are endless based on what you have and like.

It’s still strawberry season, and these Strawberry and Cheese Bruschettas – either with mozzarella or with goat cheese – just look so elegant and classy.

Besides your fruit, add more vegetables to your Fourth of July weekend with via this recipe for Chilled Vegetable Pizza that can be a rainbow of various colors depending on what veggies you choose and can easily serve a crowd. You can also adapt this version to have fruit instead for a chilled dessert fruit pizza!

This dessert only has strawberry, but no reason you can’t add blueberries or blackberries to complete the red white and blue, and you will be no fool with this Strawberry Fool Recipe  of blended strawberries with cut strawberries and the fresh whipped vanilla cream.

If you are making burgers or hot dogs for a group, consider having a variety of cheeses besides Cheddar such as Swiss or Pepperjack (even if you are doing hot dogs!) and also bacon. Not only can you top your burger with bacon, but believe me, I am happy to add it to my hot dog as well.

Besides ketchup and mustard and relish and pickles, for you might consider having little dish where guests can add toppings of sauteed mushrooms, sauteed onions, guacamole, salsa (and your guac and salsa can double to go with chips),  bbq sauce and/or blue cheese (MMMM bbq sauce and blue cheese!).

Also, if you haven’t tried this before, if there are potato chips at the party you are having/attending, try taking a handful and adding them on to your burger or hot dog!

For the fourth of July itself, which falls on a Friday this year so I think everyone is enjoying at least a 3 day weekend, I will not be doing any cooking. In fact, instead I’ll be judging cooking- I will be seated as one of the PNWBA judges at the Dallas Oregon Freedomfest BBQ competition. If you are in the area, they will be holding it in Dallas City Park and you will have an opportunity to sample some of the best BBQ in the Northwest ($1 for 2 oz sample) and a fireworks show that evening too! There should be some great teams because at 18 teams, the competition counts as a qualifier for the national competition.

This means that probably during the weekend, there will probably be at least one dish of bbq mac and cheese with some leftovers from the BBQ competition that I take home!

Avocado Pesto and more Avocado Awesomeness

Today is June 30, which marks the last day of June and therefore the last day of California Avocado Month. Of course, just because it’s the end of the celebratory month doesn’t mean you can’t keep using and enjoying avocados, particularly since California avocado season runs approximately from the middle of April through the middle of September. So you have plenty of time STILL ahead to enjoy the awesomeness of avocados.

As part of the celebration of California Avocado Month, the California Avocado Commission (CAC) worked with 15 chefs across the country to help inspire more ways to incorporate avocados in your meals. In Portland, the chef on this list is owner and chef Lisa Schroeder of Mother’s Bistro.

I was lucky enough to be invited to a dinner where Chef Lisa was creating a dinner menu with every food item featuring avocados in some way. More on that in just a little bit. I need to share how much I adore avocados.

I’m a big fan of avocados – I’ve shared recipes on this blog before for various versions of guacamole (the “gateway” to avocados and great for those who are just being introduced to avocados), as well as an avocado mac and cheese that included other green things like lime and jalapeno and green onions and cilantro matched up against Beecher’s Cheddar.

Yet another recipe you might consider for this summer is Elote Pasta Salad that upgrades pasta salad with roasted corn, cotija and avocado. Or try Vegetarian Hummus Avocado Tomato and Greens Sandwich and/or a Buffalo Blue Cheese Chicken Salad with Avocado and Greens Sandwich, both which I packed for a picnic!

And of course, I’ve enjoyed avocados made by others in many wonderful ways, varying from sushi, slicing them and including them in a wrap (even a DIY Vietnamese summer roll) or at breakfasts via the traditional way as part of Eggs Benedict or with a Mexican breakfast dish that could be a breakfast burrito or in this case, Migas (a flour tortilla stuffed with 3 chipotle-cumin scrambled eggs, chorizo sausage, Tillamook cheddar, fresh basil, homemade salsa and sour cream and then served with fresh avocado salsa). Yum right??

Clearly I have been enjoying avocados for a while, though I don’t think it was until I went to college that I first tried them. I remember when I first moved out on my own after college, I even bought a special avocado slicer (though that has since been lost among many moves. My relationship with avocado has prospered without it.)

Some people say that it is a texture thing with the avocados, which is why they don’t like them… but maybe I partially don’t believe that this can’t be conquered. I have rallied to have people try tofu or blue cheese before in recipes successfully, and I think I can do the same with avocados.

One clever way might be this Avocado Pesto recipe I threw together with one of the avocados generously gifted to me by the California Avocado Commission. One of the bunch of avocados was already ripe, and this is a 1 avocado recipe so you don’t have to shell out a lot to try this out. And, it whips up together in minutes with a food processor making the sauce so that by the time the pasta is cooked, you are ready to eat!

In this pesto pasta recipe, the avocado feels creamy, almost like a light alfredo sauce or cheese sauce, but MUCH MUCH HEALTHIER. After all, an avocado contributes nearly 20 vitamins, minerals, and phytonutrients while being sodium and cholesterol free and a source of the good, monounsaturated fat that helps lower your LDL cholesterol levels.

Avocado Pesto Recipe

Avocado Pesto, vegetarian and easy to make, has a feel sort of like an alfredo or mac and cheese sauce but much healthier! Avocado Pesto, vegetarian and easy to make, has a feel sort of like an alfredo or mac and cheese sauce but much healthier!

Ingredients:

  • 1 box of pasta (about 14 ounces). I picked vegetable macaroni pasta here, but you can use spaghetti or any kind you’d like
  • 2 tablespoons of olive oil
  • 3 small garlic cloves
  • Juice of 1/2 a lemon, about 2 tablespoons of lemon juice
  • 1 ripe avocado
  • 1/4 cup of freshly cut basil
  • 1/2 teaspoon of salt or to taste
  • 1/2 teaspoon of freshly ground pepper or to taste
  • 1/4 cup of Parmesan cheese, shredded or grated, plus optionally more for serving
  • 1/4 cup of milk
  • 1 pinch – 1 teaspoon of red pepper flakes (optional)
  • A few pinches of cheddar cheese for topping/serving (optional)

Directions:

  1. Boil water and cook your pasta until al dente as you normally would. This usually means for me boiling a pot of water with a pinch of salt, and then once it is boiling I add the pasta and a quick drizzle of olive oil. This cools the water and I wait for it to come to boiling again and once it does so, after a few minutes I check to see whether it is al dente.
  2. While the water is coming to a boil/the pasta is cooking, in a food processor mix in the 2 tablespoons of olive oil and the garlic. Process these together first until the garlic is basically chopped.
  3. Now, add in the lemon juice, spoon in the avocado (leaving out the skin and pit), the 2 tablespoons of basil, salt, pepper, and 1/4 cup of Parmesan cheese.  Process everything until smooth.
  4. Finally, add the milk and process again until fully mixed. Depending on the size of your avocado or your taste, you may want to adjust the salt or pepper or Parmesan until the flavor is to your liking. I know my avocado was large, and I added more Parmesan.
  5. When the pasta is ready, drain the water from the pasta and then mix in this avocado pesto sauce and optionally the red pepper flakes until everything is well combined. Top optionally with cheese of your choice and enjoy!

I added 1 teaspoon of red pepper to my pasta so I could enjoy a little heat, but you can feel free to add just a pinch instead, or ignore all together. Optionally, you can also top with freshly ground pepper and a few pinches of cheddar to reinforce the “cheesiness” of this creamy pasta dish/trick someone into eating avocado. You can also get inspired like the Mac and Cheese of the Avocado Dinner and add textural and flavorful fun with bacon!

When you go out to purchase Avocados, look for the sticker and that the word “California” is on the label that proves the avocado is from California rather than from overseas. A few interesting facts:

  • Did you know that California produces approximately 90% of the nation’s avocado crop?
  • California avocados are hand-grown on approximately 5000 small family farms throughout central and southern California
  • There are 7 varieties of avocados in California, with Hass accounting for 95%: the rest of the avocado varieties are named Bacon, Fuerte, Gwen, Lamb Hass, Pinkerton, Reed, and Zutano.
  • The Hass tree was actually patented (the first patent on a tree) but the patent had run out by the time Hass avocados started to become popular.
  • All the Haas avocados are descended from one original Hass Mother Tree from the 1920s. Check here for the story of the Hass Mother Tree!

Strawberry and Cheese Bruschetta Recipes

It’s strawberry season right now in Portland, and although the small looking Hood strawberries may look not as plump and juicy as their California cousins, let me assure you that they make up for their appearance in flavors. This makes them such the treasure that people get up early to rush to the Farmers Market before they sell out – and yes, they do sell out.

I like strawberries usually with a little bit of cream, but of course with cheese is also quite acceptable, like in these strawberry and cheese bruschetta recipes. I have two ways of making strawberry and cheese bruschetta, which celebrates the flavors of these strawberries by complimenting them just with a little rich creamy cheese and olive oil, a little counter with good balsamic vinegar and then uses the vehicle of toasted bread to get them into your mouth.

One uses mozzarella, as well as salt and fresh ground pepper, and the other uses goat cheese. I decided to share both with you. Perhaps for fun, since the ingredients are so close together, you might make both at once like I did for a little bruschetta face-off.

After all, it might take you tops 20 minutes to whip this together for your early summer get together.

They look gorgeously impressive as a starter for a dinner party, or just for yourself to go with your sangria or glass of wine as you sit outside on your porch or patio reading a book.

Strawberry Bruschetta with Mozzarella

This is a lot like caprese, but instead of heirloom tomatoes (oh, can’t wait for those treasures to start appearing on the plants and markets) it uses the current in season strawberries. This version of bruschetta highlights the strawberries more as they are contrasted against the very fresh subtle taste of the rest of the ingredients, and there’s something delightful about the parallel bursts when you bite both into a strawberry and a little mozzarella piece. The amount for the recipe serves 4.

Ingredients:

  • 1/2 French Baguette or you can also use a good bread loaf that has a nice crust that you might slice into quarters or halves depending on the loaf size
  • 1 1/2 cups fresh strawberries
  • 2 tablespoons of fresh basil, chopped
  • 4 ounces fresh mozzarella, diced
  • Extra virgin olive oil
  • Good balsamic vinegar
  • Coarse salt
  • Freshly ground black pepper

Directions:

  1. Slice your baguette or bread into palm-sized pieces, brush with oil and toast or grill until lightly toasted.
  2. Clean, dry, and then dice strawberries.
  3. Chop your basil leaves finely, add to the mixing bowl of strawberries and toss, then  let stand.
  4. Dice up your fresh mozzarella, and add to the mixing bowl. Toss together, and then spoon this mixture onto each of your bread slices.
  5. Drizzle all the slices lightly with a little bit of olive oil and a drizzle of balsamic vinegar. Finish with a sprinkling of salt and fresh ground black pepper.

Strawberry Bruschetta with Goat Cheese

The reason why I like this version of bruschetta is that the texture of the goat cheese is very luxurious, and depending on what goat cheese you purchase it often has an extra bit of tangyness that is added.

Ingredients:

  • 1/2 French Baguette or you can also use a good bread loaf that has a nice crust that you might slice into quarters or halves depending on the loaf size
  • Extra virgin olive oil to brush on baguette slices
  • 1 1/2 cups fresh strawberries, diced
  • 4-5 large basil leaves
  • 4 ounces goat cheese
  • balsamic vinegar for drizzling
  • Freshly ground black pepper

Directions:

  1. Slice your baguette or bread into palm-sized pieces, brush with oil and toast or grill until lightly toasted.
  2. Clean, dry, and then dice strawberries. Place them in a mixing bowl.
  3. Chop your basil leaves finely, add to the mixing bowl of strawberries, toss, and then let stand.
  4. On each of your bread slices, spread your goat cheese. Depending on the strength of flavor of your goat cheese, you might slather it on or just want a schmear.
  5. Finally, top each slice with the strawberry and basil. Drizzle all the slices lightly with (optional) a little bit of olive oil and a drizzle of balsamic vinegar. Finish with a freshly ground black pepper.

So easy but beautiful and delicious. You won’t break a sweat making these at all, but the results look incredible.
